I'm curious how the provinces work... Since France and other big ones like Spain are just one province...

That what I have thought too. If I am example france and I go war with spain and I want more land in europe do I have to conquer madrid and I am ruler of the whole iberian peninsula? If we assume I win many battles against spain and they loose the war, I can demand money and little provinces in northern spain not the whole peninsula. That would be more realistic.

You don't need to, it's already a text file, just with a different extension. Open it in notepad or some other text editor. It's a bit dodgy though, lots of encoded (at least as far as I can tell) parts but it's legible.
