yeah they have kids....mine had to many and got me bankrupt....... plus they have a princess from the start and I seriously doubt that's realistic
You are right , but... Hey, it´s a game! I doubt it is possible to simulate coelibate with this engine, which does not support historical correct settings anyway (see heirs to the throne, etc.) The Teutonic Order played a significant role in that time and place, I´m happy they are implemented... IMHO take it just as is.

Well, technically you can roleplay it yourself. Don't marry any of your family and only adopt new members. You can consider the adoption to be a noble who dedicates his life to the order.
