Dragon Ball Super might have reduced the violence for that reason. Toriyama took note of it because he told Toyotaro to draw his scenes with more grittiness and violence.
But in the manga as far as I recall, Goku spared Freeza because he wanted to fight him again. Can't help but think that this is because Goku is more of a good guy. Don't think this was really Toriyama's intention as much as it was an intentional error in translation by the American studios. On the other hand Goku does appear to want to save Freeza just because he can.

That might have just been show filler. But he fell asleep and became fat again.
Seems like Piccolo, Krillin and Tien will get to do stuff as well. Goku might use Ultra Instinct and Vegeta may be getting a few new techniques as well.
