The obvious ones would be the Saxon/Lombard/Kiev emergences.
Need to think of what else.

There were no major plagues or famines that I know of in our time period.
And, frankly, I can't think of anything else.
Arab invasion against Constantinople? The usual quarrels between the churches of east and west. etc.
Won't we need to make an Arab faction then? At the most we only have Muslim rebels in Spain.
Looking at earthquakes, volcanoes and floods on wiki, Europe from 800 to 1000 seems to be pretty quiet.
Most technological advances were in the Muslim world and didn't reach Europe for another good while.
There's always the occasional independent viking raid.
The Kiev faction will emerge the year 882

If Christian influence in a game doesn't spread so much, then why would some random swedish peasant say to himself "Gee, this pagan worship-thingy sure is silly. I'm gonna build a shrine to a monotheistic religion that I've never even heard about." ?

As a general rule, those who converted non-christians into christianity were usually christians themselves. They were converted before they converted anyone.
Saxons can emerge anytime, from 787 to 795 let's say, give some variability. The Lombards from 790 to 800, so also some overlap.
You can make Charlemagne's crowning as emperor an event.
2 problems with that I think.
1) The faction name can't change in game, I think?
2) What if Charlemagne is dead by 800, when he was crowned in real life?
In response to #1, I'td just be an event, you wouldn't necesarily have to change any aspect of the game, just a little messager informing the player of the fact. As for #2 you're right, but maybe theres a way to script the event to the general being alive.

Now, I have to ask: Can an event change completely the faction units, buildings etc? If it can:
- let's say, between 860-870 - Bulgaria converts to Christianity, 52 nobles rebel and are executed, Byzantine and Papal missionaries convert the population several times
- 893 (or the enthronement of the first Bulgarian tsar after the conversion) - capital is moved from Pliska to Veliki Preslav (if possible), Greek liturgic language and writings are replaced with the new Cyrillic alphabet
If Christianizations can't change a faction, then I guess those last ones are useless...
Maybe there could be a scripted Karelian invasion around the beginning of the 10th century, assuming that Karelia hasn't been taken yet? It was around those times that the Karelians developed their distinct culture and the centuries of Karelo-Tavastian hostility began. Of course, it would be best to have the Karelians as an emerging faction, but sadly all the faction slots are already taken.
