Did eastern units ever changed?

If you look at the miltary units of turkish origin and generally of the muslim and compare it to the units of later era like after 15th century you will notice that are a bit the same for example the mameluks of egypt when napoleon invaded the mameluks were about the same as before.Or sipahis of otoman empire used for a long time still bow and chainmail!! Why militairy technlogy stopped in the eastern region???????????
