'export_descr_buildings.txt' in BI\data directory.
Find the church you want to add it too (near the bottom of the file)
Add under 'capabilities' this line:
happiness bonus bonus 25

have a look in this thread, about halfway down there is a 'Modding Guides' section one of which is called 'A complete breakdown of export_descr_building.txt' and is followed by 'How to add and edit buildings'
