My Athlon 64 3700 (San Diego) is OC'ed at 2.7Ghz. An Athlon 64 X2 5200 is clocked at 2.6Ghz. Does that mean my CPU is faster? Or does the dual core really make a difference?

Dual core makes a huge difference, my new core duo 6300 clocked at something like 1.8 gig is flying compared to my old Pentium 4 3 gig.
As you might know there are two processor cores clocked at 2,6GHz in 5200+, so it's about as good in older games and much better in new games that actually support dual core.
C2D and P4 shouldn't be even compared like that, it's a whole different architecture.

Not really, the 5200 X2 is dual core, yours is just single core. Although not that many games actually take advantage of dual core, yet.

Even the old games would run better on the new 5200, even if they only have to run on one core. Because the MHz of a chip is still over-rated. The newest AMD chips have much better architecture, cache using algorithms, etc. You're falling victim to the Megahertz Myth
