how do i edit units?

What do you mean edit them? In what regard? If you want to change things like attack, defense and these kind of values you need to edit a text file. Namely export_descr_unit which you will find in this location:
Rome - Total War/data
There is a guide at the end of that file regarding what those values stand for.
To find the unit you want to edit you need to go first in this location:
Rome - Total War/data/text
and open the text file called export_units. There you need to search for the name that the unit has in the game. You then need to copy the part that is inside the brackets in the left part of the unit name and search that in the file I told you above(export_decr_unit). That is how you will know which entry from there to edit.
