    Balsamic vinegar is actually harder to make than any good wine. I once had the opportunity to visit an "Aceteria" (aceto=vinegar) not far from Modena (the home of the balsamic vinegar) and it was awesome. The process of making the oldest balsamic vinegar can take up to 40 years and more, and it costs more than gold (I remember, it was like 2010, a bottle of 100 ml of 40 years old balsamic vinegar could only be sell on auctions and could easily sell for up to over 2000 €; they said me it was used mostly with white truffle, so combined the two could make a dish worth more than my monthly salary, dammit).

    There's a lot of fake balsamic vinegar out there, especially with those very old ones, but it's pretty easy to recognize them: very old vinegar is no more black, but it gets to get a yellow color, with different tonalities depending on the wood they used to age it (different barrels, as it shrinks as it ages); the reason why it loses color is because over the years the tannin in the liquid will drop more and more to the bottom of the barrel and consequently will be removed every time they change the barrel.

    We tested a couple of drops of the 40 yold one on a slice of 36 months aged Parmigiano, with a glass of DOC Lambrusco, definitively one of the best combo flavors I ever tasted.

    Really? So when I was in Sorrento trying to buy balsamic vinegar there was a huge amount of laughing at the dumb american tourist who wanted to buy it, insinuating Italians never used balsamic vinegar. Personally I made a lunch last week with spinach, mozz, salt, baguette, good olive oil and balsamic that I got in a recipe from an Italian recipe book. Is it that we are laughed at for not being able to tell the difference between good or bad balsamic and olive oil, or that balsamic isn't used in traditional Italian dishes? I feel like it is too delicious to be discarded.

    As i was today in the public sauna and bath with my darling because of his birthday and our wedding day anniversary tomorrow (but i must work ).

    We were in the Soft Sauna ( 65 ° Celsius / 149 ° Fahrenheit), Herb Sauna (85 ° Celsius / 185 ° Fahrenheit), Hamam ( 50 ° Celsius / 122 ° Fahrenheit and 100 % humidity) with salt peeling and as last soft sauna again.

    It was very relaxing and refreshing, i feel very good tonight.

    I visit the sauna every time I step outdoors between June and September where I live lol. 98 F with 100% humidity makes the clothes stick to my back on a daily basis. Every time I get into my car it is an uninhabitable hell zone. For the life of me I cannot fathom why anyone would willingly enter such an environment unless at gunpoint.

    I just recently got a new car that isn't black and that has working AC and it's been a world of difference. Sitting in an all black car on a 90f day with 80-100% humidity with no working AC is the closest to a sauna I'll ever willingly go in my life.

    Sounds great! Apart from the work, but I am of course happy that you are not unemployed and miserable for that. I am not a big sauna person and in that respect I am unusual for my culture. But I will go to sauna when offered; I just don't seek out the opportunity.

    I have hard time understanding why my fellow Finns heat up the sauna even during heat waves in the summer, but some wintery activities are really pleasant to end in a warm sauna. Particularly winter swimming.
