Playing as Epirus, can I recruit more elephants mercs? If so, where?

Unfortunately, elephants are not available for recruitment as mercs. Only specific factions can get them at specific locations, as Epirus, you can get them in Antioch as the city has an elephant stable.

Also, if you happen to defeat any in battle you get a unit of them as "captured" elephants.

Which is odd if you, like me, tend to turn them into mega-kebabs using oxybeles.

To this day, I still question the logic of how 'killing' them counts as rounding them up and making the poor beasts go to war at your beck and call.... (Curiously, the AI never uses the mahout spike to kill their mounts when they run amok even if it is to deny you your prize, I occasionally do it if they panic too close to my lines).

I've never gotten a single elephant from the after battle events, I guess it's only a small chance to capture them?

It's a lower chance than the hoplite/phalangite capture scripts.

I would note that historically, elephants were captured from the losing side.
