Graphics Corruption
After a few minutes of playing in battle mode, the graphics take a dump and produce this:

Oh, but it doesn't only apply to Medieval 2, it even messes with the graphics when not playing the game. Any help?
My computer specs by the way:
Operating System: Windows XP Professional (5.1, Build 2600) Service Pack
Processor: AMD Athlon(tm) XP 2800+, MMX, 3DNow, ~2.1GHz
Memory: 1024MB RAM
Card name: RADEON X800 GTO 256 MB
Running everything on max with Shader version 2 except for shadows and I'm getting 30-40 FPS average.

Go into Catalyst Control Center and turn Catalyst AI off. That should fix it. If not then you might just be overheating, try turning a few settings down etc. Though its most likely Catalyst AI, this is a pretty well known problem.
