The cut is what we would call "Ossobuco", it's basically beef shank cut in slices, it's gorgeous because of all that marrow

I'm no that huge fan of marrow honestly, I mean I eat it, no problem (I also eat brain, lungs, liver, etc.. all with Chianti ofc ), but the taste becomes boring soon and it can actually cause nausea if you eat too much of it.

Nah usually you eat only 2 plates "Markklößchensuppe" a 4-5 "Markklößchen". Then you are normally not hungry any more.

Sisig version is the best and you could imagine baby chicks bathing in hot oil and singing until fried.

I also got currywurst and a mettbrotchen. (I love raw meat.)

German slaughterhouses have very severe controlls with high fines, if rules are violated.

It doesn't happen.

Mettbrötchen only with pepper and salt is very delicious.
