Home made pumpkin pie is almost always just the stuff bought out of a can in the store and then put into a pie crust at home. It's like buying one of those cake kits at walmart and saying your cakes are home made. I mean technically yeah but also no.

Not sure what you're talking about. You should typically avoid using canned pumpkin and carve out an ACTUAL pumpkin for the job. No grocery store on Earth that I'm aware of spices things correctly with the full range of stuff that you can use. Again, this is akin to saying a store bought apple pie is as good as a homemade one. That's patently false. Anyone older than 20 and who cooks knows this.
No wonder you have no idea what you're talking about, you bought grocery store pumpkin pie in Germany. It was probably made of sawdust and schnitzel.
What are the range of spices that you would recommend then? I don't really know how to turn the insides of the pumpkin into the filling for the pie itself. Is it just the raw pumpkin goo itself + nutmeg and other seasonings or do I need to do something more complex?

In all seriousness, though, homemade pumpkin pie rules. Perhaps I was wrong to disparage the cooking traditions of non-Americans, but that's just how I roll. It got your attention, didn't it?
Firstly, extract the pumpkin innards and get rid of the damn seeds! As there will be a ton of seeds inside. You can keep the pumpkin goo chilled in the fridge for several days if necessary before the operation begins. Get a big ole mixing bowl, a huge one, and have an egg beater ready because you'll be mixing it hard. The following is my recipe for making two whole pies.
In the mixing bowl, put together 5 cups of pumpkin goo, 5 eggs, 1 and 3/4 cups of sugar, 1 and 1/4 teaspoons of salt, 2 and 1/2 teaspoons of cinnamon, 1 and 1/4 teaspoons of ginger, 3/4 a teaspoon of cloves, and 3 cups of cream (i.e. half-and-half, ultra pasteurized). Mix the hell out of it!
Separately, make the homemade pie crust for two separate pies! For that you'll need 1 cup of flour, 4 ounces of cream cheese, and an entire cube of butter.
Once you have filled the basin of your pie pan (ceramic or glass), pour in the pie filling over the crust. Put in the oven at 425 degrees Farhenheit (or 218 degrees Celsius for you foreigners) for just 15 minutes at first, then when that is done reduce the heat to 350 degrees Fahrenheit (176 degrees Celsius) and bake for another 55 minutes.
