What's the recommended unit scale setting? is Huge the most historically accurate?

I don't know that there's a "historically accurate" scale as such, but Huge is 1:10 ratio with real life, and personally the only one I play on.

Definitely go for the huge unit size unless you have performance issues or like settlement warfare a lot. The cities get very congested with huge unit sizes and the AI works badly within the cramped places. I personally find settlement fights the least gratifying element in the game anyway and sometimes just avoid it altogether. In open areas, the 1:10 ratio with huge units gives a gameplay experience vastly superior to smaller unit sizes.
