Default The unit type triangle, Swordsmen and Axemen, Spearmen and Cavalry.

Basically like this. Swordsmen and Axemen have an advantage against Spearmen, Cavalry can crush Swordsmen and Axemen and finally Spearmen can bring down Cavalry.

There are alot of factors(The stats of a unit, their stamina, terrain, unit quality, etc) that provides an advantage or a disadvantage but is the above strategy is true?

    Not Really...

While Sword and Axe units will usually break Spears of a same level... Cavalry will be able to both Die for Axe and Sword, but kill Spear...

Cavalry, In this case, Shock and "Melee" are not meant for the prolonged fighting of the Infantry. they are for an Shock that will break the enemy, or they will have to disangage... not doing so will lead to massive loss

What u need to think is:

Spear Usually loss for Sword and Axes and Maces/Clubs, but depends on Formation, and Stats, but they fight back better against Cav
Cav is made for charges to Break the enemy and keeping the enemy running after a rout
Skirmishers (cav and foot) are bad in Melee, but good in dealing damage on engaded units, OR units that are too far to fight back

Swordsmen are highly susceptible to cavalry charges than spearmen unless they brace for the charge and even then they will suffer a bit. Try having a cavalry with a high charge atk against swordsmen, they'll have managed to kill half of a single unit. Even skirmisher cavalry will be able to damage swordsmen a bit (if weakened) with a frontal charge.

Not to mention swordsmen won't be able easily kill cavalry although their numbers will result in the cavalry suffering far more damage in the melee.
