Barracks
OK, I'm playing as Rome, I just took Sparta and Corinth (the first Macedon settlements I have taken). Sparta has a Greek Army Barracks but can only train Hastati and Town Watch, when it should allow higher recruitment. Does this mean I have to tear it down and build Roman barracks?

No, you can only recruit better infantry in regions with a red shield.

OK, so I'm Pre-Marian right now, does that mean I cannot yet recruit Auxilias?
Also, I noticed Auxilias are lighter infantry, does that mean that Immitation legions are heavier infantry and better to use as support legions and replacement units?

premarian cannot get auxilia. And imitations... I never use them so I can;t speak for them. Auxiliary swords do the job fine for me.

Imitation legionaires can be used for an auxillary legion. They are better than auxilia I think but not as good as the regular legionaires.
