You mean assaults? I usually just use ladders, put them against the wall around the gate, then pour my auxiliary spears and swords up them, with the legionaries in testudo behind the ladders to go up after them. Take the gate, then send in the cavalry, and make the mad rush to the town square.

i only use siege towers and ladders. i usually do a frontal attack with two siege towers (the enemy towers will concentrate most of their arrows on one tower so the second can reach the walls undamaged).
while i do a frontal attack, i have other units that attacks the walls with ladders on both left and right side of the town where no enemy's are.
i keep the enemy occupied with my frontal assault and have my other units take the towers so no enemy unit can out or in (in case of reinforecements) and the towers will attack the enemy.
depending on the number of enemies, i go for the town square to occupy it or i go help the frontal assault and eleminate the resting enemies on the walls and head afterwards to the town square.
it may take a little bit longer, but i try to lose as few men as possible and to kill as many as possible.
