I've personally never seen the Danish AI actually conquer much in this expansion, so I'm going to have to go with Denmark.

The correct answer is the Teutonic Order! All winners have been rewarded! I threw all my forces against the Lithuanians, who got wiped out, once their last king was killed. Then I refrained from expansion, improving my finances and infrastructure. The Mongols attacked me, but I massacred all their armies in a single battle, grabbed a small region in Belarus and exchanged it with Danzig. The Danes were also pretty aggressive, which is why I captured Tallinn, just before this screenshot was taken. Meanwhile, Denmark annexed already bankrupt and defeated by the rebels Norway and they now launch a war against Holy Roman Empire, together with the Poles. I'm the richest and most powerful state, by a small margin, which means that I could lose, if attacked by a coalition of Mongols, Novgorod, Poland and Denmark.

After capturing the first rebel settlements, the Scots attacked me, but I quickly defeated their numerically superior armies, mainly because dread and cavalry are a tad over-powered. I was lucky enough to wipe their dynasty very early, by executing King Alexander and Prince... Gordon, so the Wallace event was never triggered. Then I remained passive, investing all my profits to improve the infrastructure in recently conquered Scotland. I then grew a bit bored and captured Newcastle and Carlisle from the English, but then in a diplomatic revolution, I signed an alliance by them.
The Welsh, the actual superpower of the game didn't take the news very kindly, so they concentrated all their armies on the north, suspiciously strolling around my cities. I preemptively declared war on them and promptly evaporated their armies, again thanks to my precious dread and cavalry. Now that the Welsh are but a comical memory in the British Isles, I plan to stabilise my annexed provinces, assimilate them to my superior, Norwegian culture and then attack the remaining faction in the south, either the Barons or the English.
