Late era campaign.
Which are their best troops to use?
Where is a good way to expand?

The troops depend on the enemy you face, and africa is an easy way to expand and defend from enemies. Next you can move into Greece easily enough, avoiding conflict with Catholic nations

Tips for Sicily? Eh....you can kinda do whatever you want after making an alliance with the Papal States ASAP.
Consolidate any rebel settlements in Italy, then either go into Greece or expand into Africa. Sicily is a pretty simple campaign, and you get a lot of opportunities with Crusades. After you've taken the Moors out (make sure to make alliances with the Spanish factions), move into the Fatmids and help the Crusader States out so they can buffer you against the Turks. Their troops are pretty standard Italian with those nice Muslim Archers, however unfortunately your Norman-Sicilio Knights will be replaced with Feudal Knights soon enough, IIRC.
The real challenge of Sicily is when you decide to take the whole of Italy for yourself
