I need to bind two new units to their region, one to Knossos, the other to Rhodos. There's a voice in main_unit called region_unit_resource_requirement but what's the exact name I need to write for both?

In order to recruit those units only in their specific regions, iirc, you would have to create the unit resource (Auxilia_Crete and Auxilia_Rhodos for example), then attach this to every faction in the startpos so that any faction that ends up owning those regions can recruit the unit, then find the regions in the region array of the startpos and attach it there as well on the appropriate line (You'll be able to tell).
If you wanted to keep things simple attach the Knossos unit to Auxilia_Hellenic and the Rhodes unit to Auxilia_Asia. However, Sparta and Athens and any faction that owns that land will be able to recruit the Knossos unit and Sardes and Pergamon and any other faction, likewise, will be able to recruit the Rhodes unit.

Where its written "Auxilia_Italian Auxilia_Roman". Thats the section of region startpos where you have to input your newly created AoR.
there is another way much more complex to create an AOR with AOR garrisons but it would need a whole tutorial actually...in vanilla AOR recruitement and AOR garrisons aren't matched.
But Magnar vid pretty well explains how to create vanilla AOR step by step.
