Need A little help

I seeing that some of you guys are talking about large armies and what not. I'm new to the totalwar world. How do I unlock the unplayable factions, have more turns etc. I want to have a difficult, long campaign so I an get the most out of the game. Thanks "Ne Desit Virtus"
