What are some tips on speeding up population growth so I can upgrade?
Keep taxes low obviously, send a general with high chivalry and traits like "Architect", "Kind Ruler", etc. Anything that lowers squalor which you can see in the top bar of your city summary scroll.
Farming output should also affect population growth but don't quote me until someone confirms it
Farms and bakery have direct pop growth effects. Then you have town hall and church buildings that kind of affect pop growth because they lower squalor. They don't directly increase growth but they increase the threshold at which it reduces. To answer OP, the only thing you can do now is to bring a general with good traits as mentioned above or you can use add pop cheat (i do, if the requirement is only a couple hundreds or so)

Chivalry. Chivalry, chivalry, chivalry. High chivalry massively increases growth, while dread decreases it. Low taxes are important for this, because in addition to the small direct effects, they also give governors chivalry-increasing traits like "noble in rule" over time. Growth buildings like bakeries, farms, and churches are also important. I can confirm that farms do indeed up pop growth.

I already knew some of these, but not others. Like Chivalry effecting growth. That's pretty useful when it comes to growth in castles because you can't adjust taxes.
