Disband units
I am probably wrong but I feel like when you disband units in a city, the population will not come back to simple citizens like in RTW !
for example :
I disband a 120 archers stack in Le Caire wich has a 5 000 population, and the pop won't go up to 5120 !
Am I wrong ?

I have noticed that too and I used to "grow" cities by moving peasants around in RTW

No your not going mad I noticed this also. It makes patience a virtue when increasing a settlements population as all you can do is wait and build farming improvements etc. Especially as you can no longer enslave populations on capture of a settlement and send half the population to settlements with a general in ala RTW. More realistic for the period I suppose.
On the plus side though when you recruit units from your pool it dosen't take away from your settlements population, a bonus for me as I like to play on huge unit size. Also you get plenty of florins for sacking a decent sized settlement, I recently sacked Edinburgh at minor city level and got over 14000 juicy florins.
