How do I keep my troops from starving to death when beseiging an enemy settlement? Sorry if this is a total noob question!

You can't unless you want to cheat or unless your FM has a trait that makes him a logistics expert. A prolonged siege in a foreing land would take the toll on your army in real life, that's why it is portraied in EB.
I use the same tactics during early game with Sweboz and Bosporos. There is a form of attrition, I think. But it only affects the morale of the besieging army, and the hitpoints of the general. This makes it risky to commit to lengthy sieges against enemy factions with a strong military unless you have another stack ready to fend off any counter-attacks launched.
Maybe there should be a foraging bonus while laying siege. It'd make sense, since that's what happened in real life, with the besieging army setting up camp and happily plundering all the nearby resources, rather than starving at an equal or worse pace than the besieged. Nothing too broken, just another couple turns worth of food at most.
There is actually such trait-based foraging mechanism, but it is based on chance and other traits of the general. Culture also comes to play - nomads are usually better at this.
