I didn't say the kepi cover shouldn't be represented. Quite on the contrary, it would make the portrayal of infanterie de ligne more accurate. Also, there will be more textures for the kepi. It won't be just a simple colour code swap though, as there's no reason for that since the French model 1884 képi only existed in that combination of colour.
However I do dislike "randomness for the sake of randomness". Armies did maintain a general level of uniformity, especially in the beginning. On the other hand it ought to be used to portray second line units (the infanterie territoriale for instance was outfitted in a pretty ragtag fashion historically, which set it apart from the infanterie de ligne and réserve), and countries with limited resources being affected by material attrition (see the homogeneously uniformed Austro-Hungarian units of 1914 compared to their ragged and mismatched comrades of 1918).
Denmark's softcap was bicolor (trouser, with trip for the piping) so it'd require a slight edit. That's unlikely to be made by default due to the limited space on the atlas though.
The Swiss Army did have a softcap, but it was based on the Austro-Hungarian model. It wasn't worn on campaign (the shako was worn instead) except by cyclists and fortress troops... neither of which are ingame.

Representation of Denmark's kepi being different from the one provided already would be entirely moot. Petty differences, especially from a minor nation, can be overlooked. Besides, Denmark doesn't have their own unit variants but rather uses the entente variations which uses the "german militia cap" which looks close but isn't quite if you follow. If the entente variation used this new kepi, it'd be perfect, especially since most uniforms tend to be a boring solid color, ie Portugal. Both Switzerland and Denmark, who use the german militia cap in game would perhaps fair better with this new kepi variant.
That being said, I'm glad you agree that there should be the color variation, provided it's not used with the first line French infantry. Truth be told, I'm rather excited to see France with red kepis (provided you change them away from the maroon they are now). But solid kepis shouldn't be swept underneath the table so soon and should at least be considered. On a whole, it probably wouldn't matter but it would be nice to see.
Moving on to the randomness for the sake of randomness, I'm not entirely sure what you mean by this. As in you dislike the many variations among units, such as putties to knee high boots, and so on? I can get behind that, but currently there is not much randomness with the French Rifle Infantry (Old) as they all use long coats, tall boots, and I believe a blue kepi. Hypothetically, if you include multiples of the red kepis along with one of the blue kepi, the randomness of blue among red wouldn't be too terribly random and would make the blue cover a bit rare. Include four kepis for the variant models "hat" portion of the French Rifle Infantry Classic, three destined to be red while the last is blue, only a fourth should have the blue covers. Randomness isn't too terribly random, I feel, especially when you can alter the amount of possibilities to grant a natural bias.

EDIT: For a moment there, I thought I saw a Flamberge bayonet. But instead it appears the desert heat has just made it wiggly.
Also, be prepared; the Ottoman generals are far more powerful than you puny westerners think.
This one general, with no bodyguard left alive, single-handedly felled half my rifle battalion with his blade. He claimed another light infantry battalion before retreating from the field. Not sure if this was a glitch, or if it was because the general was Attaturk...
