Well, no one will leave me alone about this topic, so I thought I would formally answer it. I've honestly thought about this long before Netflix decided to spread the rumor of their show, and my opinions have changed much over the years. At my present state of mind, this is probably who I would cast in a Zelda TV series or film.
The (Almost) Perfect Cast for a Live Action Zelda Show/Film

Ryan Gosling
You might know him as: Driver (Drive)
Lets be completely honest: Link doesn't have much character and has very little personality. He usually serves as a vessel from which the player experiences the games, or he's an uberbishi specifically tailored to said fanbase. He's never spoken. He's never expressed any thoughts, desires, quirks, nothing. He's essentially a blank slate and virtually any actor could play him. If we do want to stick as close to the games as possible, then at the very least Link is a socially awkward weirdo who has an aversion to talking to people. Ryan Gosling has pulled off several roles that fit this bill, and while I'm not exactly a big fan of the actor himself I honestly could see him pulling off a very quiet incarnation of Link.
Princess Zelda

Emily Blunt
You might know her as: Rita (Edge of Tomorrow)
Much like Ryan Gosling, Emily Blunt is an actress I don't particularly care for, but her mannerisms sort of fit the bill to how I perceive what little character development the Princess of Hyrule has had. She's very good at playing "snooty" characters, or those that have power and control and come off in a way that is egocentric but knowledgeable. If they end up going the Warrior Zelda route like Twilight Princess did then even better: she's pulled off commanders in battle pretty well.
Ganondorf

Marc Alaimo
You might know him as: Gul Dukat (Deep Space Nine)
I cannot stress how perfect this man would fit the bill of Ganondorf. Visually, just throwing a beard on him would do the job. It helps that he's played several (shockingly sympathetic) villainous characters with scary similar back stories to Ganondorf in the past as well. Just look up his entire performance of Gul Dukat and replace every time he shouts "Bajoran!" with "Hylian!" and "Pah Wraith!" with "Triforce!"
Saria

Chloë Grace Moretz
You might know her as: Hit Girl (Kickass)
Being an ageless Kokiri, Saria always came off to me as someone who would seem to have the knowledge or at least mannerisms of someone far older than her appearance suggests. It's difficult to pull off a character of great knowledge but child like expression as the two seem incompatible, but Chloë Grace Moretz pulled it off (in a rather foul way) as Hit Girl in the movie Kickass. I could easily picture her as a cheerful, child like Saria able to converse on an equal level with elder characters.
Darunia

Peter Jurasik
You might know him as: Londo Mollari (Babylon 5)
If there's a man who can play a man angry at something at all times and still be a happy lovable dolt, it's Peter Jurasik. In addition to having performed one the best room trashing scenes of all time this side of Citizen Kane and The Room, he's more than capable of donning loads of makeup and playing very animated, loud, boisterous, and wild characters such as Darunia.
Ruto

Tilda Swinton
You might know her as: The White Witch (The Chronicles of Narnia)
Just look at her, she already looks like a fish! I don't mean that in a bad way. What I mean to say is that Tilda Swinton has always pulled off very otherworldly or otherwise inhuman characters, both through a combination of her somewhat uncanny appearance and strange mannerisms. I feel like this could be put to good effect for a portrayal of Ruto, or any Zora for that matter. She's also just always insanely creepy in every role she plays: perfect for a sexually frustrated fish lady trying to marry a sexually ambiguous elf man.
The Zelda series is weird...

Louise Fletcher
You might know her as:
Nurse Ratched (One Flew Over the Cuckoo's Nest)
I'm not entirely sure why, but I've always really admired Louise Fletcher as an actress. She has always played some of the strangest passive aggressive villains of all time, pulling off characters that seem extremely polite and friendly, but the longer you speak with them the more you realize she probably wants to snap your neck. From her terrifying portrayal of Nurse Ratched to the even more sinister Kai Winn, I feel like she could easily pull off the very kind and loving figure Impa is most of the time, and then easily turn extremely hostile when things go south.
Nabooru

Zoe Saldana
You might know her as: Uhura (Star Trek the Star Trek)
She's played a feisty subservant officer who constantly questions her commander before, just like Nabooru. Also tell me that she doesn't have a scary resemblance to the Gerudo in the image above already. Not an actress I particularly care for, but she's played a Nabooru like character before and looks almost just like her, that's too good an opportunity to miss.
Rauru

Christopher Plummer
You might know him as: That villainous old man from everything
A man well known for playing an entire gallery of awesome villains that I cannot count on both hands, I've always wanted to see the guy turn around and play a heroic character. Rauru really does not have much personality shown in his brief appearances, and a more meaner twist to the "old wise man" character would be pretty neat to see.
Malon

Frances McDormand
You might know her as: Marge Gunderson (Fargo)
In addition to being one of the only people who naturally has Malon's really strange hair parting effect, Frances McDormand's simple mannerisms and down to earth characters (particular Marge from Fargo) always made me think she'd pull off the red haired rancher with ease. Despite her age she just has that strange simple dorky adorableness that I picture suiting Malon so well.
Midna

Cathrine Schells
You might know her as: Midna.... I mean Maya (Space 1999)
Why Cathrine Schells as Midna? Because believe it or not, she actually has already played Midna. She has portrayed an estranged Princess of a dying civilization who is forced to shapeshift and join forces with the protagonists to save the day. Yes, I'm calling it out that Midna is probably a direct rip off of Maya from Space: 1999. Similar back story aside, the visual evidence alone is pretty damning. Too bad she's 70 years old now. I guess she can play Ganondorf if Marc Alaimo doesn't:

Christoph Waltz
You might know him as: Colonel Hans Landa (Inglourious Basterds)
Much like Catherine Schells, Chirstoph Waltz has played a character with scary similar mannerisms as Zant. Just look up any scenes of his character Hans Landa. Honestly, it really would have to look nothing actually like the games it's based off of.
It just doesn't translate to a TV show (or any media).
The only alternative in my mind is a rather creative, out-of-the-box cartoon.
