    Just a thought...

    Whereas a priest can have a heretics and false prophets executed. How about, adding a similar function where a priest has the ability to convert an imam to Christianity and vice versa. Also a convert is more likely to be victim to an assassination attempt. As religious unrest is key to gaining a happy population.

    For example, I am playing as the Turks and I want to capture a Christian settlement, I could send my Imams to convert the locals and priest to Islam, creating unrest and civil war, then I go in and mop up... or vice versa.

    Where the population of an area may be converted over time, it seems unrealistic that priests or imams could be converted except in extremely rare cases.
    These are not common people. These are individuals who have dedicated their whole lives to their religions.
    To make them convert by force is one thing, but convincing them to go out and champion a religion they hated seems far fetched.
