How can you mod in order to change unit's weapons?

Hi guys,
I was wondering if is it possible to change some units' weapons: I'd really like to give swords to the Knights and the Constable of Jerusalem instead of maces and axes. If this can be done please tell me wich programs do I eventually need and how to do it.
