Dunedin infantry with swords and shields?
Does anyone know of a mod which has a Dunedin infantry unit with swords and shields?

DaC's Northern Dunedain faction has Dunedain Wardens as a sword and shield infantry unit.
Though in that mod's next release they'll be changed to spear and shield.

There's sword & shield Dúnedain in DCI: Tôl Acharn as mercs for Tôl Acharns

Tôl Acharn is also part of the submods WSC (my personal favourite TATW submod) and MOS
They are created by smoesville, though can't recall if the mod he made them for was ever released (and even if that was for an older version of TATW).
If you play any mod that have them in and want to make them more avilable you can just give me a heads up and I'll tell you how.

the dunedain wardens are being changed to spearmen i believe
The remnant of the King's Men who survived in Middle-earth after the destruction of Númenor were called the Black Númenóreans since they worshipped Sauron and were "enamoured of evil knowledge". They worshipped Darkness, and believed that Melkor and Sauron were its most powerful servants. At the end of the Second Age two of their number, Herumor and Fuinur, became lords among the Haradrim, though what became of them is unknown.

For DaC yes but they will stay the same for the other submods i believe.
