What you're looing for is all in the table campaign_variables, mostly under the keys occupation_decision (or if you want to cheat, this already has all the entries you're looking for seperated off. Just rename the pack (conquer.pack) to make your own changes).
Number of slaves taken can't be changed just for capturing settlements (it will apply to any battle). Reducing the slave_points_mod will decrease the number taken (with 0 being no slaves ever being taken)

The occupation_decision -s work great, I have set the
occupation_decision_loot_income_percentage_modifier to 150 from the original 25 to get greater loot, now the loots resembles better the rome 1 values.
(At value=500 you got about 50000 gold from a late game metropolis however the loot is quite unpredictable sometimes.)
The original loot gold value was so pathetic that it didn't worth to loot anything considering the other negative effects of looting.
However the slave_points_mod don't work unfortunately, I have captured exactly the same number with slave_points_mod=1 and with slave_points_mod=100. (The same battle reloaded.)
