Depends on your playing style I would say. If you want higher pops then go large, better battles then go huge.

I prefer large. I feel the battles, especially sieges have a better flow to them.
Huge does have it's benefits. The need to manage unit recruitment with city populace adds a bit of strategy,and battles can certainly have more of an epic feel to them. It can also be more challenging to maintain some sense of order, more challenge is always good. 8)
Another thing to keep an eye on is system performance, things won't bog down on large as soon as they will on huge. I'm running a p4 2.4 oc'ed to 2.7, 1.5 gig ram, X-fi extreme music, and a 7800gs. On huge settings I have to dial back some of the eyecandy to maintain decent framerates on big battles.
Huge units are the best for me and this is the setting I did all tests for my mods.
Generally I want to control as many men as possible to resemple the best battle realism. Even at the loss of some frame rates.
But this desire has helped me to find ways to increase frame rate in DarthMod even comparing to original vanilla version.
