When/why do you use certain unit abilities like Shield Wall and such?

I was wondering this for a while now. I've read certain tactics such as engaging the shield wall ability AFTER your men complete their charge. Why I'm not sure. These are the sort of tips I was wondering if you could share with us. if you happen to have one.

What ability and when do you time it's use and if possible, why? (more damage, less fatigue or whatnot)

Shield wall should be used if your going to get charged by any type of cav, especially chariots. It gives you a lot of bracing bonuses and will prevent them from getting a good charge.
