For example how do u defeat a levy pikemen with a hoplite,without any units to flank em?

flank them with the hoplite then.

it's very difficult because long pikes keep your hoplites at distance, if your hoplite are elite or spartan, you can anyway defeat easily the pikemen, but if not it's very hard without another units, with two units the best tactic is to place them at a distance and when the pikemen attack the first unit, the other can flank them, placing your two units head to head abring also the enemy to attack one of your leaving his back to your second unit.
But with only one i will go for a two line formation, in this way while your center will be surely crushed your wings envelop the enemy:

That is suicide if you do it from the front.
Make them run around without the spears they are faster than the pikemen.
