Default Confusion about the Rome faction.

In the game, the first faction you see is Rome, House of cornelia, who has a disdain for latin culture, but affinity for hellenic culture. The starting settlements are mostly or completely Latin as far as religion goes, but apparently that causes disorder. The thing I wonder is, should I (or can I) start converting to Hellenic? Would that be better? Usually a faction starts with the belief that goes along with its local people, but it seems Rome is at odds with what's going on.

This seems to be a good faction, with +1 to food, and experienced foot soldiers. I'm just not sure if I should spend time converting my settlements or not.

You can't "convert" your faction's culture! This is not Lithuania from Medieval2!

The Cornelii's Hellenic affinity will come in useful when you're conquering settlements in the Balkans & Asia Minor. You'd just have to deal with its shortcomings by managing your settlements properly.
