Default Playing with RR and GRM

I'm playing with RR and GRM enabled. I've noticed that you have to sit your War Council members in respective castles to begin the turn countdown till you can recruit select professional army units.

As such, am I right to assume it is pointless to have 3+ castles in your kingdom, if that? I suppose an extra castle or two can be used by your Jr. War Council Members? That and I guess if your empire sprawls across the map, creating the need for front line castles?

Is there any other way to recruit professional army units aside from sitting at your castle for 7 turns for a sergeant spearmen and hiring mercenaries?
    Thnx for your help.

It is not pointless to have more than 3 castles in your kingdom, as almost every castle provides special AoR units which can be "bred" and recruited without a war councillor present (provided you have built/upgraded the according buildings). You do not even need a governor for these. But you are correct in so far as you will probably have one of your war councillors sit in one of your more upgraded castles all of the time to breed out professional units.

Concerning the conversion of castles into cities - do as you will. Personally, I have a house rule not to do this.

There are two ways that I know of to obtain professional (or better say 'good') non-mercenary units without having a war councillor breeding them in a castle. The first is to go for AoR units. The second: When you conquer a settlement, there may be professional units finished in the "breeding" line. If you recruit them immediately, you get them. They will disappear the next turn if a necessary war councillor is not present.

Also remember that at the start of the game professional units are recruitable in all your settlements. Some of them will disappear after the first turn if a war councillor is not present.
