I really like how the Romans stood in defense, not breaking at all. I hope it's like this in Rome 2.

The main danger of legionaries breaking is at the initial warband charge especially if the warband emerged from cover by surprise and/or the Legionaries were raw recruits. After as the warband charge lost its momentum the advantages of regular drill will mean the Romans gain the upper hand. I don't think they rotated ranks quite that often.
The Legions were best adapted to fighting slower moving formations like the Greek phalanx. Ceasar records the Barbarians charging with such force,speed and deep columns that the Legions didn't even get time to throw their pila. The Barbarians continued with the tactic throughout Imperial times simply because it was their best chance against the Legions. If this failed and it generally did, then the warband stood little chance.
The front ranks of the warband had the quality fighters, after were the farmer levies who only fought well against a fleeing enemy. The Legions weren't comfortable fighting against cavalry either, but again once the momentun was gone the cavalry stood little chance as well.
Maybe Ceasar could have said"Hmmm! Prepare him for my bedchamber"?

It all depends on the enemy, the commander and the units. Under a complete moron of a leader and with green units a most decently sized barbaric force should scare the green soldiers and unless that changes in the midst of battle it should be fairly quick paced. As stated once soldiers are in the grind of a battle and the shock and awe effect of initial charges and skirmishes have worn off then a Roman army should find itself beginning to cut through its enemy. They were efficient in causing blows to their opponents with very little effort while remaining largely protected.
As mentioned they didn't rotate as quickly as that but the battle is obviously spaced out a lot longer than that.
