what do you expect them to do? Horses dont really like being on transports, trying to get them both on and off is a pain, if your in the middle of a battle you wouldnt have time. To be honest if i had a strategy planned in which my men would take to the seas, i'd mostly make it infantry or archers anyway. Rely on mercenaries for cavalry.

What if my army composed of 8 cataphracts and 2 infantry, will they all become infantry?
The reason I hire cavalry is because I want to use them riding their horses not fighting on foot...

You're only forced to dismount them if you have them in a boat. If you want cavalry with horses, set them down next to the city and march them up to the gates! It's just a matter of planning...if you want an amphibious assault, bring a mainly infantry army. Hell, cavalry in general aren't very useful for attacking fortifications for obvious reasons - it's both realistic and historical. If you don't like that, then it's just tough luck. You might as well complain about the game having gravity in it.

jamreal I don't think you're understanding what everyone is trying to say. YOU CAN TRANSPORT ELEPHANTS, CHARIOTS, AND CAVALRY OVERSEAS ON TRANSPORT SHIPS!! Land them on the coast and then once they are disembarked on the CAMPAIGN MAP move your army to attack a city or another army, if you attack a port city in a combined battle then your units on transports on the BATTLE MAP will be only infantry and dismounted cavalry because it was impossible to launch a D-Dayesque invasion landing cavalry I don't know if you know anything about horses but even the best trained warhorse is likely to be spooked when moving on a transport ship and trying to disembark it in battle would be tedious and a lost cause cus your cav would be destroyed before it touched the beach. so you CAN transport all these units over seas just like Hannibal, but you CANNOT use them in a combined battle mounted unless they have already been landed on the CAMPAIGN MAP so here's an even better description CAMPAIGN MAP TRANSPORTS= YES!! BATTLE MAP TRANSPORTS= NO!!

We've seen pictures of dismounted cataphracts and, while it was in the last game and useful at times, it's good that it's in this one as well.
I hadn't seen the proof of the clickable button myself so others confirming it for me makes my life easier and I'm that little bit more happy leaving than entering this thread.

That's the way it was in Shogun 2 and frankly it's a usefull feature even if more often than not, you will have no incentives to dismount your cavalry.
In shogun 2 i only dismounted them to capture points, or to assaults/defend keeps, or if the ennemy had too much spear troops to make a mounted assault a viable tactic. Wich is to say, i didn't dismount them very often...But the option was nice to have.
I dismounted my general more often, always in siege defense (they make some though sword armed infantry to defend the walls), when he was exposed to lost missile fire (especially musket fire (and FOTS troops)) being on horse made for a larger target and when i wanted him to engage ennemy spears in the middle of the melee. I used him mounted only to move on the battlefield to use his abilities and bolster morale or when i lacked in regular cavalry (or had several generals in my stack).

Can we dismount elephants?
i actually doubt it, elephant units will be small and will have missiles, so you'd basically trade in a superunit for askirmish unit, this is probably also the reason only cav/camelriders show up after disembarking them because the amount of men in an elephant/chariot/siege unit will be small and horrible at melee
Look at this icon in the unit abilities bar, it seems that cavalry units will be able to mount-dismount.
