Unknown but I don't think the AI will do too much with it unless it holds the high ground. Though it's not unheard of for the AI to send light units to flank and observe and we haven't seen it on high difficulty.
For ourselves it'll be the same. Use light units to screen for us and keep an eye on the enemy as the AI is notorious in being able to get units behind you and flank you.

It looks like a great improvement, but I want to see it in the actual game to formulate an opinion.
I am excited to see it work first hand. Should bring out some nice possibilities.
Hope there are more fort options because that fort is small as. Imagine if you had a full stack. That army could not reside in such a small fort.
I think the fort is just "there" to represent the encampment and not to be used as an actual defence.
I mean back then the legions would set up a camp to protect themselves during the night and then in the day time would move out.
It's also one of those pros and cons to fortify stance since from what we see in the video it gives a big boost to the defenders in terms of defence and morale as well as extra traps and such.
With a full stack army you'll probably be able to line tons of traps and fortifications on the field anyways and to be able to hide behind walls maybe too OP

I think the biggest benefit of the line of sight will be in multiplayer. I don't trust the ai to not cheat and know where I am at all times, but against another human player it will make it so much more powerful.
I think it might actually really annoy the newer players since they won't have the battle experience and now they have to deal with possibly an invisible army moving towards them. I know a lot of people would get frustrated playing against the natives in Empire since they could hide almost anywhere.
I can see this making a siege way way more interesting, especially in city streets where you can't see around the next corner.
