The actual differences among different difficulty levels

You may benefit from a search of the forum, because you can be sure find a lot of existing information on this topic. However, the simple answer to your question is that the AI factions get monetary bonuses on the harder campaign levels and tend to like you less. When it comes to battles, the primary difference at higher difficulties is that the AI gets a morale boost, making its units harder to rout. Tactically, it is pretty inept at all levels.

You should always play battles at the harder levels because the morale boost is not that significant. What is significant is that the AI will only make a decent job of trying to outflank you on H or VH difficulty. If you haven't played a battle on the harder level difficulty against an opponent that has cavalry, the first time you do so, you are likely to find an enemy unit in your rear before you know it and have a "uh, where did THAT come from?" experience.
