In kingdoms, you can control as many as 300 soldiers in one unit?

That has been modded, vanilla Kingdoms has exactly the same gameplay and structure as MTW2
Cry God for Harry, England and Saint George!

Kingdoms increases the maximum unit size compared to vanilla. The maximum unit size is hard coded into the game engine files, and Kingdoms changed the game engine's hard code to add new functionality.

I'm not sure if 300 is the actual maximum unit. It would seem unusual that 300 would be the maximum, since that screenshot doesn't contain units that have officers in them. If 300 is the max for the normal soldiers, then the true maximum would be 303 (300 normal soldiers + 2 officers + 1 captain/general)

AFAIK, 253 is the hardcoded limit. There might be historical battles that go beyond this limit, but I don't think you can get that in a campaign. In the export_descr_unit file, the maximum unit size is 100. If you try to make a unit size greater than 100, the game will either crash or set it as 100 (can't remember which of the two actually occurs). Then, this number is multiplied by 2.5 if you're playing on huge unit size. Add 3 officers for a total of 253.
