How do you decide which of the two market chains to build in RotS? Thanks in advance

I decided to go to the Food Storage chain is better from reading the Encyclopedia descriptions for the 2 chains. Food Storage chain is for long term benefit, while the other, forgot the name, will have short and mid term benefits. Short campaigns go for the other chain, long and domination go for Food Storage chain.

Thanks. also: does the influence bonus from one of the market buildings (Shensin?, I think) apply to adjacent provinces? or only to the one in which it is built?

I am not sure, since I stopped playing ROTS, but just check the description. There should be one for conversion, and one for converting the neighbor provinces, which is always lower then the convert the province the building is located.
