I loaded up MTWII for the first time last weekend, and I've been looking here for the instructions how to unlock all the playable factions, to no avail. Would someone be so kind as to remind me how to do that?

Well, you can beat the campaign once-- but were you looking to mod it so? To do this, I believe the file that must be edited is data/world/maps/campaign/imperial_campaign/descr_strat.txt.
You might have to unpack vanilla if you wish to effect these changes on vanilla, or there may be some other, simpler way to do it, I'm afraid I can't tell you.
No need to unpack, the file is there. Just cut & paste factions from unlockable section to playable in descr_strat
pretty straight forward i believe in the file mentioned above find this at the top copy and paste unlockable factions into the playable list

In addition to text editing, you can unlock factions one-by-one by conquering them.
My suggestion. Start an easy/easy campaign as the HRE. Destroy Denmark (blow as much money on mercenaries as you need -- you aren't trying to win as the HRE, so no need to think long term). Quit your HRE campaign.
Then start an easy/easy short Danish campaign. Get Hamburg and such. Spam Viking raiders, Norse swordsmen, and dismounted huscarls (Norse archers and cavalry are optional). Wipe out the HRE, auto-resolving your sword and axe armies against their spear militias and such (or fight the battles if you feel like it). Sack everything. Adopt any generals who come up unless they're super-disloyal. Ignore the pope. Get 15 regions + no more HRE (you may need to violate Venetian or Milanese sovereignty to get Bologna, but screw 'em). All factions now unlocked.
Who would waste time on a campaign just to unlock the factions....... Just edit the text file and start proper campaigns with each faction or those you're interested and enjoy them, don't waste the pleasure of playing a faction just to unlock all factions... Besides the fact that you waste time...
Well, it's a matter of taste. My Danish quick campaign idea is for doing the campaign victory with as little fuss as possible, but of course, some people might want to play an English/French/HRE/Spanish/Venetian campaign in the first place.
Certainly, the text-editing approach works. Other people had already posted that, though, so I posted an alternative. Naturally Mikelus Trento can ignore it if preferred.

One thing I noticed is that if you start up a fresh install of MTW2, you can defeat a non-starting faction in your first campaign, quit the campaign and go to start a new one, and the defeated faction is available to play.
I don't understand why you lot teach him first to cheat, instead of telling him to complete a campaign first.
cheating is console commands . choosing the faction you like is preference
