The Romans managed to set up a night camp during Teutoberg Forest. I'm pretty sure a 20km line of march of professional soldiers, in enemy territory doesn't spook easily.

Ambushing large armies with large armies is often hard and daring tactic (no wonder why), and that is why the recorded great battles were not described as ambush battles by faction a to faction b.
Ambushing often take its roles in attacking supply lines with weak defence, small companies, important agents, split groups etc. That is why there are no many reports of ambushes, as it are the dogs work and not the work of a great hero.
No doubt people have often and always ambushed during the timeframe of Homo Sapiens and will still do, but it is not worth to record or take a note in the great scribers old parchments in stories about great battles/heroes!

It's already in the game engine indirectly, unless they somehow removed it again in R2.
Units will suffer morale hits from being flanked, not being in formation, being charged by hidden units, losing X percentage of troops in a short amount time etc.
So, if the men have time to get in formation etc. Why should they panic?
