Ranged units get an increased range, and I think units marching or charging uphill tire more easily. Some units also specialize in certain terrain, but I'm not sure how much of an impact that has.
I think it's more about what disadvantages your opponents has when fighting uphill, than what advantages you have if you're downhill.
Yes, the main effect of a hill is applied via minus to attackers. It does not stop cavalry charges but makes them a lot less effective. There is also an advantage to all troops for downhill charges. In addition to the range increase, shooters can be safely placed behind other troops (or even other shooters) as they can shoot over them and see their target. In Medieval 1 I used to regularly find a steep hill at the back of the battlefield and stack shooters behind one another, nothing could stand against that tactic.
I'm pretty sure having the high ground also gives you a morale bonus. I believe I've seen a message like that in the morale area.
Well, in Empire, tit says "Inspired: On High Ground". It also makes easier for you to charge the enemies downhill, and it's harder for them to charge you uphill. Your missile troops get more safe whilst the infantry can hold the enemy easier, since the enemy will tire of running up the hill.
And if everything goes wrong you can scream: "- Run for your lives, run for the hills! - No, mylord, they are coming from the Hills - Sorry, run away from the hills, run away from the hills. If you see the hills, run the other way!"

units on top of a hill get the following advantages:
-added range for shooting
-enemy attackers do less damage when attacking uphill
-charges lose momentum, ergo less effective
-you can shoot over your units without fear of hitting them
-enemy marching uphill get tired much quicker
all of these advantages make hills an invaluable asset, but don't be fooled; if running to the top of a hill means arriving with a tired army, then it might not be worth it. sometimes, waiting right behind a hill and letting the enemy get tired is the best way to counter. but in raw terms, having the hill is always better than not having it.
