It seems that the only way is to completely remove the boiling oil ability of the walls.
If you have the gate fully captured, then it won't put oil on your troops.
This means that all enemy units by the gatehouse must be cleared.
in my game of version 1.5, the boiling oil at the gate has been turned off.
when i defend, i place my unit on the gatehouse, but there is still no boiling oil there.
how can we turn it on again?
As far as I know, if you captured it this shouldn't be happening. This might be a bug.
Maybe the OP has confused with the voice line of "we have taken the walls" with actually capturing the gatehouse.
To actually capture the gatehouse, the enemy's flag must not be flying on either of the towers, as mentioned above. This means that there must be no enemy units anywhere near the gatehouse, on the gatehouse, or on the walls adjacent to the gatehouse. So even if you've killed all enemies on the walls and on top of the gate house, if the enemy still has units on the ground level such that their flag is still flying on the gatehouse, then your units are going to be burned.
You have to have a unit in, or behind the gatehouse for the boiling oil to work. You also have to be in the right level of settlement (wooden ones, for instance, don't have it).
Any time there is a dancing enemy flag on the gatehouse, you will get burned. You have 3 choices. One, accept the losses and move through it. Two, bring siege weapons and destroy the gatehouse, or a wall adjacent. Three, cry like a little girl and disable them in in the walls file.
I usually send in a cheap militia unit in first so the oil gets used up on them, and while it cant be poured i just rush all my men inside.
Trebuchets, aim them above the gates, when it shows "Gatehouse" and it should do it.
