    Tricorns had fallen out of style by the time the Napoleonic wars began, which is why they aren't worn in the vanilla game. There aren't any mods that I know of which use tricorns on soldiers but if there are any then your best bet would be to scour through here.

    It even felt our of fashion before, there was a transition with bicorn (between 1760 and 1780 I think), still used at the beginning of the Napoleonic wars (French, Prussian), before Shako became more or less the norm.

    Although the odd thing is how some general portraits are still portraying commanders wearing tricorns.

    Interestingly, the tricorn wouldn't be seen on the field of battle again until the American Civil War. Early on in the war it wasn't uncommon, especially in the south, for regiments to march off to battle dressed up in what were, essentially, idealized 1770's uniforms.
