    There’s not really much difference between eating roadkill and game. As long as it’s not totally destroyed or something. My late Uncle God bless him was an animal lover, so when we saw some hit a pheasant he stopped and wrung the bird and took it home.



    Edit: By the way Vađarholmr where do you get all this meat from?

    With road kill you greatly increase the chance of their being bone slivers or car parts in the meat somewhere. I mean, you're right that it's not inherently bad but it's not definitely not as safe as a cleanly shot animal. Not to mention that unless you hit it yourself there's no real way to know exactly how long it's been there.

    Alright time to drag this thread back to life yet another year after skipping 2021.

    Malt ale - Local recipe part 1.

    Malt ale course at a farm

    I have wanted to start with this for a while, so jumped at the chance when one local brewer was going to hold a course to instruct others in how to make the ale.

    It starts with sprouting then drying the barley over special smokers. These are names sonn and is borrowed from Old Irish, probably back in Norse times. From archaeology we know this technique was used here in the 1200's.

    We then went through brewing, with the important ingredients being local malt, optionally dark syrup/brown sugar/melasses etc, optionally a herb such as hops if you like, and juniper water. The last traditionally both to flavour and sterilise.

    I bought some malt, and prepared to make my second batch of such ale.

    Brewing at home

    Boiling a whole bunch of juniper to sanitise and flavour stuff. It works great to clean floors and hair with also.

    I decided to use a mix of regular pilsner malt and local malt, both because no one else like the strong tast, and price.

    With the worth I added some yarrow, traditionally used in ale instead of hops here, and a bit of dark syrup for the colour and gravity. I used Norwegian kneik-yeast, and the mixture is currently bubbling outside my room.
    I have no idea how ale gravity works, but I took a reading and hope I figure out later.

    I don’t really drink alcohol anymore but just the process of making the ale seems fascinating. I had no idea about the juniper water’s involvement

    It really is a whole different thing than mead. Much more important to keep everything sterile, and still might go wrong. And many more steps to it.

    Tried one with home made malt from my farm, but that ended up as 1% abv kinda sour tea tasting of juniper and yarrow.

    Might have tasted like Kombucha for all I know, but I've never tried that before

    It was more that the wort was just just weak, and I could taste the herbs more than the malt.
