There are a lot of ways. You can simply whiten the text and type over it. Or if if wan't to keep it very smooth looking, you can use the clone tool so that you can match the scanned paper color. Is that what you mean?

Depending on the Font, some scanners come with a built in tool for that.
When you are scanning check one of the drop down boxes from image to text document.
