Vanilla refers to an unmodded game - basically the game you get out of the box.
In order to conquer the map, I would suggest building a strong economy in the beginning, something many neglect.
As far as stronger factions, there are many elements you can "strengthen" (money, stats, starting positions, etc) Which did you have in mind?

normal rome is vanilla rome. Vanilla is the standard ice cream flavor and the standard version of RTW, straight outta the box.
I believe that once you achieve your objections for the campaign map, i.e. after you conquer the 50 provinces, you'll get a pop up that says something like "Your faction has achieved its objective! Quit game?" if you choose no you can keep playing and keep conquering.
Make which faction stronger, yours or your enemies? Stronger how? You can make your own faction stronger by building a healthy economy. You can make opposing factions stronger by raising the difficulty level. Anything above normal does not affect campaign AI, it only affects how much of a bonus enemy troops gain over you on the field. Playing on high or very high difficulty settings is like setting a handicap for yourself in battles.

After i completed it once (50 regions) it just took me bak too the main menu and when i went back onto that compaigne it just did nothing

Hmm...did you happen to check the "short campaign" button before you started playing? I know for sure that the two previous total war games allowed you to play on even after achieving your objectives, I thought this one did too. I never had the patience to play till I conquered the whole map though.

I'm taking a guess here, but I think this is what you're looking for

In descr_strat text (Go to your RTW folder, Data, World, Maps, campain, imprerial campain)
Play with these, they shoulkd effect win conditions, I'll check (makesure you make a backup before playing around!)
