depends what their stacks is composed off. Odd, undefined question

Anyways, their ashigaru got crap all morale. Their ronin units have few men. Outwit their ashigaru and attack them from the flanks and rear and they'll easily break. For their ronin, swamp them with high number units and they'll struggle. Rarely see them use monk units unless its at the end game part in a long/domination campaign. Also always keep your general near your frontline units and protect your rear/flanks from their cavalry (or any unit that try to flank you).

I suspect you ask this in a situation where you're early in your campaign, the ikko tend to spam large armies early on. In any case, if they are overwhelming, have them attack you near your castle. Station a few men in the castle and since your army is near it you'll get castle garrison forces as reinforcements (or should get from what i remember, but only if troops are stationed in the castle already and its not full). Defensive sieges is the easiest way to defeat a more powerful army with defensive out in the open battles being the 2nd easiest.

Ashigaru: Protect your archers, use the yari ashi's spear wall, its one of the best abilities in the game. Also make 2 lines of melee ashigaru and have the 2nd line join the battle just after the 1st line. Ashigaru sucks at fighting without support, this remedies this quite alot.
Samurai: You shouldnt have any trouble if you're at this point...honestly. archers in front, pull them back when the enemy is nearing. Use a few units for flanking and deploy frontline units in 2 rows as described above. Remember to protect your own flanks and rear. General sits just behind the frontlines to boost morale and give inspire.
